    Deanston from the distillery, at 52.8%, 2400 bottles in all. Deanston is a Highland single malt, unchillfiltered and made from Scottish barley near Stirling. The distillery sits on the River Teith near Doune, between Stirling and the Highlands.

    Distilled slowly for a clean, fruity spirit, for a soft, waxy make of green apple and honey. Maturation came in a Pedro Ximenez cask, layered over the fruity Deanston make. Carrying no age, soft vanillin (vanilla) and a green apple suggest a fair spell in cask. The cool, even temperature of the old weaving shed gives a slow, steady maturation. Unchillfiltered and at natural colour, it keeps the full waxy body in the glass. The spirit is condensed in shell and tube condensers for a clean, fruity make. It was mothballed in 1982 and revived in 1990 under Burn Stewart. Its old weaving shed, once full of looms, is now a cool stone warehouse for the casks.

    At 52.8%, undiluted, it is deep and honeyed. Apple, pear and a soft honey, with raisin, date and treacle from the cask. Beneath it run green apple, pear and a soft honey. The close is waxy and warming, fruit over a gentle oak. This is a waxy, honeyed Highland single malt.
