Description
Deanston from the distillery, a 9 year old, from 2008, at 56.4%. Deanston is a Highland single malt, the old cotton mill at Doune turned distillery in 1966. The site was the Adelphi cotton mill, built in 1785 by Sir Richard Arkwright and turned to whisky in 1965.
Distilled slowly for a clean, fruity spirit, building the honeyed Deanston style. Finished in a Brandy cask, the wood building over the green, waxy fruit. In these extractive early years the oak gives vanillin as vanilla and oak lactones as coconut over bright green apple and honey. A gentle maturation suits the soft make, the honey and wax growing richer with time. The clean, fruity spirit shows the cask clearly, vanilla and honey to the fore. Years in oak round the spirit, the green apple and honey deepening over the wax. It draws water from the River Teith, which also drives the turbine that powers the distillery.
At a natural 56.4% it is full and waxy. A fruity, waxy sweetness, with a grapey, raisined warmth from the cask. Soft orchard fruit and honey sit behind the cask. It finishes long, waxy and warming. This is a waxy, honeyed Highland single malt.
