    A 9 year old Deanston from the bottler Torsten Paul Whisky Company, 2011, at 52.3%. A bright, honeyed Highland fruit of apple and pear, with dried fruit, fig and walnut from the cask. Bottled unchillfiltered and at natural colour, it keeps a full waxy body. A waxy, honeyed Highland malt from 100% Scottish barley. This is the cotton mill malt of the River Teith.

    A 9 year old Deanston from the bottler Torsten Paul Whisky Company, distilled in 2011, from cask 266A, bottled at 52.3%, one of 74 bottles. Deanston is a green, honeyed Highland malt from the Teith valley, the only Scottish distillery to make its own power. Its old weaving shed, once full of looms, is now a cool stone warehouse for the casks.

    Worked through a long ferment and the bulbous stills for a waxy, fruity make, for a soft, waxy make of green apple and honey. Finished in an Oloroso cask, the wood building over the green, waxy fruit. At an extractive age eugenol lends a clove note and lactones a coconut, the spirit fresh, green and waxy. The clean, fruity spirit shows the cask clearly, vanilla and honey to the fore. The distillery sits on the River Teith near Doune, between Stirling and the Highlands. Maturing in the vaulted stone warehouse, the spirit develops slow and steady.

    At a natural 52.3% it is full and waxy. Baked apple, honey and a creamy malt, with dried fruit, fig and walnut from the cask. A dried fruit and a soft oak give it depth. The close is waxy and warming, fruit over a gentle oak. This is a green, honeyed Highland malt with a waxy heart.
