    This official Deanston, a 40 year old, at 45.6%, 480 bottles in all. Deanston is a waxy, honeyed Highland malt made in a former mill on the banks of the Teith. The spirit is condensed in shell and tube condensers for a clean, fruity make.

    Mashed in the open top tun and fermented long for a fruity make, for a clean, fruity spirit with a waxy edge. Finished in an Oloroso cask, the wood building over the green, waxy fruit. Ethereal and fragile, decades draw the malt to a honeyed, waxy delicacy of sotolon and old oak. Active wood frames the fruit without overwhelming the soft Highland spirit. It runs an open top mash tun, two wash and two spirit stills of a bulbous shape. The cool, even temperature of the old weaving shed gives a slow, steady maturation. River Teith water and a long ferment give the fruity, estery Deanston make. It uses 100% Scottish barley and bottles its malt unchillfiltered, with no added colour.

    At 45.6% it is clean and soft. A fruity, waxy sweetness, with dried fruit, fig and walnut from the cask. It is fruity and waxy, the malty spirit shining through. The close is waxy and warming, fruit over a gentle oak. This is Deanston's waxy, fruity Highland style.
