Description
A 19 year old Deanston from the bottler The Whisky Fellas, distilled in 2002, bottled at 52.3%, one of 72 bottles. Deanston is a Highland single malt, unchillfiltered and made from Scottish barley near Stirling. The distillery sits on the River Teith near Doune, between Stirling and the Highlands.
The spirit was distilled from unpeated Scottish barley in bulbous copper stills, for a soft, waxy make of green apple and honey. Maturation came in a Fino cask, layered over the fruity Deanston make. At oxidative maturity vanillin and lactones are fully expressed, the malt deepening over its waxy weight. Active wood frames the fruit without overwhelming the soft Highland spirit. It draws water from the River Teith, which also drives the turbine that powers the distillery. The waxy texture is the Deanston signature, carried through the years in cask. It uses 100% Scottish barley and bottles its malt unchillfiltered, with no added colour.
At a hearty 52.3% it carries real weight. A bright, honeyed orchard fruit, with a dry, bready, almond note from the cask. Soft orchard fruit and honey sit behind the cask. The finish runs long, fruity and warming. This is the soft, waxy malt of Doune.
