Description
The Glasgow bottler Hunter Laing bottled this Deanston, an 18 year old, distilled in 1996, from cask HL 10428, bottled at 50%, one of 628 bottles. Deanston is a Highland single malt distilled in a converted cotton mill on the River Teith near Doune. The spirit is condensed in shell and tube condensers for a clean, fruity make.
The spirit was distilled slowly for a clean, fruity spirit, building the honeyed Deanston style. First fill bourbon gave a fuller vanilla and a touch of coconut from the lactones. At oxidative maturity vanillin and lactones are fully expressed, the malt deepening over its waxy weight. River Teith water and a long ferment give the fruity, estery Deanston make. The long ferment and clear wort give a fruity spirit that ages with grace. Long ageing turns the fresh fruit towards honey, dried fruit and a soft spice. Unchillfiltered and at natural colour, it keeps the full waxy body in the glass.
At a hearty 50% it carries real weight. Baked apple, honey and a creamy malt, with a soft vanilla from the oak. Soft orchard fruit and honey sit behind the cask. It finishes long, waxy and warming. This is the soft, waxy malt of Doune.
