Description
The London bottler Elixir Distillers bottled this Deanston, a 16 year old, distilled in 2008, from cask 0808000174, bottled at 53.4%, one of 232 bottles. Deanston is a Highland single malt, the old cotton mill at Doune turned distillery in 1966. It runs an open top mash tun, two wash and two spirit stills of a bulbous shape.
It was distilled from unpeated Scottish barley in bulbous copper stills, giving the soft, malty Highland spirit. Maturation came in ex-Bourbon wood, the oak quiet behind the fruity spirit. At oxidative maturity vanillin and lactones are fully expressed, the malt deepening over its waxy weight. The clean, fruity spirit shows the cask clearly, vanilla and honey to the fore. Refill oak lets the waxy, honeyed Deanston character lead the way. Active wood frames the fruit without overwhelming the soft Highland spirit. The site was the Adelphi cotton mill, built in 1785 by Sir Richard Arkwright and turned to whisky in 1965.
At a natural 53.4% it is full and waxy. Honey, malt and a gentle clove, with a soft vanilla from the oak. A dried fruit and a soft oak give it depth. It finishes long, waxy and warming. This is a fruity, unchillfiltered Highland single malt.
