Description
An official release of Deanston, a 15 year old, at 57.3%, 1194 bottles in all. Deanston is a green, honeyed Highland malt from the Teith valley, the only Scottish distillery to make its own power. It draws water from the River Teith, which also drives the turbine that powers the distillery.
The spirit was mashed in the open top tun and fermented long for a fruity make, the long ferment building a fruity, estery character. A Sauternes cask held it, shaping the honeyed spirit over the years. Through oxidative maturity esters concentrate, apple and pear turning honeyed over the waxy body. The light, fruity make takes cask flavour well while keeping its honey and wax. The spirit is condensed in shell and tube condensers for a clean, fruity make. Deanston is the only distillery in Scotland to generate all its own power from the river.
Bottled at a cask strength 57.3%, it is rich. Apple, pear and a soft honey, with honeyed apricot and a candied citrus from the cask. It is fruity and waxy, the malty spirit shining through. The finish is long, waxy and gently spiced. This is a green, honeyed Highland malt with a waxy heart.
