Description
A Deanston of a 14 year old chosen by the bottler The Caskhound, distilled in 2008, from cask 191A, bottled at 54.9%, one of 122 bottles. Deanston is a soft, malty Highland single malt from the old Adelphi cotton mill at Doune. It uses 100% Scottish barley and bottles its malt unchillfiltered, with no added colour.
The spirit was run through the bulbous stills with their upward sloping lyne arms, the long ferment building a fruity, estery character. Finished in a Palo Cortado cask, the wood building over the green, waxy fruit. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, the green apple deepening to honey. River Teith water and a long ferment give the fruity, estery Deanston make. Its old weaving shed, once full of looms, is now a cool stone warehouse for the casks. It draws water from the River Teith, which also drives the turbine that powers the distillery.
At cask strength 54.9% it is full bodied. A waxy, malty sweetness, with a dry, nutty, savoury depth from the cask. It is fruity and waxy, the malty spirit shining through. The finish is rounded, honeyed and gently spiced. This is a green, honeyed Highland malt with a waxy heart.
