A 13 year old Deanston from the Pitlochry bottler Signatory Vintage, 2007, at 65%. An easy, honeyed fruit over a soft, waxy body, with dried fruit, fig and walnut from the cask. Its old weaving shed is now a cool stone warehouse for the casks. Mothballed in 1982, it was revived in 1990 under Burn Stewart. This is a Highland single malt of real character.

Description
A 13 year old Deanston from the Pitlochry bottler Signatory Vintage, distilled in 2007, from cask 900147, bottled at 65%, one of 625 bottles. Deanston is a Highland malt made in a vaulted stone mill, waxy and malty in style. Its wash is fermented long, for a fruity, estery character.
The spirit was run through the bulbous stills with their upward sloping lyne arms, for the waxy, honeyed make Deanston is known for. It was matured in an Oloroso cask, the wood working slowly into the waxy malt. By the integrating teens congeners fade and esters build, the waxy, honeyed spirit growing rounder. The waxy texture is the Deanston signature, carried through the years in cask. Refill oak lets the waxy, honeyed Deanston character lead the way. The cool, even temperature of the old weaving shed gives a slow, steady maturation. Deanston is the only distillery in Scotland to generate all its own power from the river.
At its natural 65% it is concentrated. Green apple, honey and a waxy malt, with dried fruit, fig and walnut from the cask. A baked apple and a gentle clove lift it. The finish is long, waxy and gently spiced. This is a fruity, unchillfiltered Highland single malt.
