This Deanston was bottled by the Pitlochry bottler Signatory Vintage, a 13 year old, distilled in 2007, from cask 900144, bottled at 50.2%, one of 812 bottles. Deanston is a bright, fruity Highland single malt distilled in a Victorian mill at Doune. The mill ran for 180 years before cotton declined and the site became a distillery.
The spirit was mashed in the open top tun and fermented long for a fruity make, the long ferment building a fruity, estery character. Maturation came in an Oloroso cask, layered over the fruity Deanston make. Through integration spirit and wood marry, vanillin settling into a rounded vanilla as ethyl esters lend a riper apple and pear. Refill oak lets the waxy, honeyed Deanston character lead the way. Active wood frames the fruit without overwhelming the soft Highland spirit. Deanston is the only distillery in Scotland to generate all its own power from the river.
At a natural 50.2% it is full and waxy. Honey, malt and a gentle clove, with dried fruit, fig and walnut from the cask. Soft orchard fruit and honey sit behind the cask. The finish is long, waxy and gently spiced. This is Deanston, the mill turned distillery on the Teith.
