A waxy, honeyed Highland malt from 100% Scottish barley. Its old weaving shed is now a cool stone warehouse for the casks. This is the cotton mill malt of the River Teith.

Description
The Pitlochry bottler Signatory Vintage bottled this Deanston, a 13 year old, distilled in 2007, from cask 900141, bottled at 63.9%, one of 613 bottles. Deanston is a Highland single malt distilled in a converted cotton mill on the River Teith near Doune. It was mothballed in 1982 and revived in 1990 under Burn Stewart.
Run through the bulbous stills with their upward sloping lyne arms, for a clean, fruity spirit with a waxy edge. An Oloroso cask held it, shaping the honeyed spirit over the years. By the integrating teens congeners fade and esters build, the waxy, honeyed spirit growing rounder. The cool, even temperature of the old weaving shed gives a slow, steady maturation. The distillery sits on the River Teith near Doune, between Stirling and the Highlands. Maturing in the vaulted stone warehouse, the spirit develops slow and steady.
At 63.9%, undiluted, it is deep and honeyed. Green apple, honey and a waxy malt, with dried fruit, fig and walnut from the cask. A dried fruit and a soft oak give it depth. The close is waxy and warming, fruit over a gentle oak. This is a fruity, unchillfiltered Highland single malt.
