Description
This Deanston was bottled by the Pitlochry bottler Signatory Vintage, a 13 year old, distilled in 2007, from cask 900140, bottled at 63.7%, one of 564 bottles. Deanston is a Highland single malt, the old cotton mill at Doune turned distillery in 1966. The mill ran for 180 years before cotton declined and the site became a distillery.
The spirit was distilled slowly for a clean, fruity spirit, building the honeyed Deanston style. An Oloroso cask held it, shaping the honeyed spirit over the years. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the body softer and waxier. Refill oak lets the waxy, honeyed Deanston character lead the way. The clean, fruity spirit shows the cask clearly, vanilla and honey to the fore. River Teith water and a long ferment give the fruity, estery Deanston make. It runs an open top mash tun, two wash and two spirit stills of a bulbous shape.
At a natural 63.7% it is full and waxy. A bright, honeyed orchard fruit, with dried fruit, fig and walnut from the cask. Soft orchard fruit and honey sit behind the cask. A long, honeyed finish carries a green apple and a ginger spice. This is a waxy, honeyed Highland single malt.
