Description
This Deanston was bottled by the Glasgow bottler Douglas Laing, a 12 year old, distilled in 2009, from cask DL 16330, bottled at 48.4%, one of 293 bottles. Deanston is a bright, fruity Highland single malt distilled in a Victorian mill at Doune. The spirit is condensed in shell and tube condensers for a clean, fruity make.
The spirit was made on River Teith water and condensed in shell and tube condensers, building the honeyed Deanston style. Maturation came in ex-Bourbon wood, the oak quiet behind the fruity spirit. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, the green apple deepening to honey. The long ferment and clear wort give a fruity spirit that ages with grace. The mill ran for 180 years before cotton declined and the site became a distillery. Unchillfiltered and at natural colour, it keeps the full waxy body in the glass.
At its natural 48.4% it is concentrated. A bright, honeyed orchard fruit, with a soft vanilla from the oak. The mouthfeel is buttery and waxy, the fruit on a honeyed body. A honeyed finish ends on apple and a fiery oak spice. This is a waxy, honeyed Highland single malt.
