Description
A Deanston of a 12 year old chosen by the Pitlochry bottler Signatory Vintage, distilled in 2007, from cask 900142, bottled at 64.5%, one of 630 bottles. Deanston is a honeyed, waxy Highland malt distilled beside the River Teith since 1966. It draws water from the River Teith, which also drives the turbine that powers the distillery.
The spirit was worked through a long ferment and the bulbous stills for a waxy, fruity make, building the honeyed Deanston style. Finished in an Oloroso cask, the wood building over the green, waxy fruit. By the integrating teens congeners fade and esters build, the waxy, honeyed spirit growing rounder. Maturing in the vaulted stone warehouse, the spirit develops slow and steady. Its wash is fermented long, for a fruity, estery character. The clean, fruity spirit shows the cask clearly, vanilla and honey to the fore. The light, fruity make takes cask flavour well while keeping its honey and wax.
At 64.5%, undiluted, it is deep and honeyed. Green apple, honey and a waxy malt, with dried fruit, fig and walnut from the cask. It is fruity and waxy, the malty spirit shining through. It finishes long, waxy and warming. This is the soft, waxy malt of Doune.
