Description
This Deanston was bottled by the bottler The Vintage Malt Whisky Co Ltd, an 11 year old, distilled in 2009, from cask 9046, bottled at 53.5%, one of 240 bottles. Deanston is a Highland single malt distilled in a converted cotton mill on the River Teith near Doune. The mill ran for 180 years before cotton declined and the site became a distillery.
Worked through a long ferment and the bulbous stills for a waxy, fruity make, for a soft, waxy make of green apple and honey. A Red Wine cask held it, shaping the honeyed spirit over the years. By the integrating teens congeners fade and esters build, the waxy, honeyed spirit growing rounder. The waxy texture is the Deanston signature, carried through the years in cask. The light, fruity make takes cask flavour well while keeping its honey and wax. Deanston is the only distillery in Scotland to generate all its own power from the river.
At a natural 53.5% it is full and waxy. A waxy, malty sweetness, with red berry and a dry spice from the cask. The texture is soft and waxy, the fruit lifted by vanilla. A honeyed finish ends on apple and a fiery oak spice. This is Deanston, the mill turned distillery on the Teith.
