Description
This Deanston was bottled by the bottler Brave New Spirits, an 11 year old, distilled in 2009, from cask 116, bottled at 54.8%, one of 312 bottles. Deanston is a waxy, honeyed Highland malt made in a former mill on the banks of the Teith. The distillery sits on the River Teith near Doune, between Stirling and the Highlands.
It was mashed in the open top tun and fermented long for a fruity make, for the waxy, honeyed make Deanston is known for. Maturation came in a Merlot cask, layered over the fruity Deanston make. Through integration spirit and wood marry, vanillin settling into a rounded vanilla as ethyl esters lend a riper apple and pear. Long ageing turns the fresh fruit towards honey, dried fruit and a soft spice. Unchillfiltered and at natural colour, it keeps the full waxy body in the glass. It was mothballed in 1982 and revived in 1990 under Burn Stewart.
At 54.8%, undiluted, it is deep and honeyed. Apple, pear and a soft honey, with a soft, plummy red berry from the cask. Beneath it run green apple, pear and a soft honey. The finish is rounded, honeyed and gently spiced. This is the soft, waxy malt of Doune.
