A Deanston of an 11 year old from the Pitlochry bottler Signatory Vintage, at 66.7%. Pear, apple and a soft vanilla fill the glass, with dried fruit, fig and walnut from the cask. It is the only distillery in Scotland to make all its own power from the river. Its old weaving shed is now a cool stone warehouse for the casks. This is a waxy, honeyed Highland single malt.

Description
A Deanston of an 11 year old chosen by the Pitlochry bottler Signatory Vintage, distilled in 2008, from cask 900070, bottled at 66.7%, one of 610 bottles. Deanston is a waxy, honeyed Highland malt made in a former mill on the banks of the Teith. Deanston is the only distillery in Scotland to generate all its own power from the river.
It was made on River Teith water and condensed in shell and tube condensers, the long ferment building a fruity, estery character. Finished in an Oloroso cask, the wood building over the green, waxy fruit. Through integration spirit and wood marry, vanillin settling into a rounded vanilla as ethyl esters lend a riper apple and pear. Refill oak lets the waxy, honeyed Deanston character lead the way. Maturing in the vaulted stone warehouse, the spirit develops slow and steady. The spirit is condensed in shell and tube condensers for a clean, fruity make.
At a hearty 66.7% it carries real weight. A bright, honeyed orchard fruit, with dried fruit, fig and walnut from the cask. The mouthfeel is buttery and waxy, the fruit on a honeyed body. A long, honeyed finish carries a green apple and a ginger spice. This is a fruity, unchillfiltered Highland single malt.
