Description
An 11 year old Deanston from the Pitlochry bottler Signatory Vintage, distilled in 2006, from cask 900128, bottled at 64.7%, one of 647 bottles. Deanston is a honeyed, waxy Highland malt distilled beside the River Teith since 1966. The mill ran for 180 years before cotton declined and the site became a distillery.
Mashed in the open top tun and fermented long for a fruity make, for the waxy, honeyed make Deanston is known for. It was matured in an Oloroso cask, the wood working slowly into the waxy malt. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, the green apple deepening to honey. Long ageing turns the fresh fruit towards honey, dried fruit and a soft spice. Active wood frames the fruit without overwhelming the soft Highland spirit. The distillery sits on the River Teith near Doune, between Stirling and the Highlands.
At its natural 64.7% it is concentrated. Green apple, honey and a waxy malt, with dried fruit, fig and walnut from the cask. Soft orchard fruit and honey sit behind the cask. The finish is long, waxy and gently spiced. This is a fruity, unchillfiltered Highland single malt.
