A 10 year old Deanston from the bottler A.D. Rattray, distilled in 2011, from cask 800047, bottled at 62.5%, one of 304 bottles. Deanston is a green, honeyed Highland malt from the Teith valley, the only Scottish distillery to make its own power. The spirit is condensed in shell and tube condensers for a clean, fruity make.
It was distilled slowly for a clean, fruity spirit, giving the soft, malty Highland spirit. It was matured in refill ex-Bourbon oak, a soft vanilla beneath the honey. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the body softer and waxier. Vanillin and oak lactones from the wood lend vanilla and coconut over the fruit. The waxy texture is the Deanston signature, carried through the years in cask. It uses 100% Scottish barley and bottles its malt unchillfiltered, with no added colour. Years in oak round the spirit, the green apple and honey deepening over the wax.
At 62.5%, undiluted, it is deep and honeyed. A bright, honeyed orchard fruit, with a soft vanilla from the oak. Beneath it run green apple, pear and a soft honey. A honeyed finish ends on apple and a fiery oak spice. This is Deanston, the mill turned distillery on the Teith.
