Description
This Deanston was bottled by the Glasgow bottler Douglas Laing, a 10 year old, distilled in 2009, from cask DL 13449, bottled at 48.4%, one of 227 bottles. Deanston is a bright, fruity Highland single malt distilled in a Victorian mill at Doune. The site was the Adelphi cotton mill, built in 1785 by Sir Richard Arkwright and turned to whisky in 1965.
It was mashed in the open top tun and fermented long for a fruity make, for a soft, waxy make of green apple and honey. It rested in ex-Bourbon oak, oak lactones lending vanilla and a little coconut. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, the green apple deepening to honey. River Teith water and a long ferment give the fruity, estery Deanston make. The mill ran for 180 years before cotton declined and the site became a distillery. Its wash is fermented long, for a fruity, estery character.
At a natural 48.4% it is full and waxy. A bright, honeyed orchard fruit, with a soft vanilla from the oak. A dried fruit and a soft oak give it depth. The finish is rounded, honeyed and gently spiced. This is the cotton mill malt of the River Teith.
