Description
De Trafford Chenin Blanc is a single-variety wine from the winery's holdings in South Africa's Coastal Region, drawn from three plots around Stellenbosch. Two carry vines over thirty years old, one on sandy and gravel soils and another set eight kilometres from the cooling influence of the sea, with a third on deep red Hutton soils that hold moisture well. That spread of old-vine sites and soils feeds the wine's concentration and structure. It is fermented in barrel, where the ferment and the wine's ageing take place in wood, building body and a light toasty, savoury layer through oxygen exchange with the barrel. Old-vine Chenin gives the acidity to carry that weight. The colour is deep lemon-gold. The nose shows ripe quince, apple tart and apricot, nuanced with honey, flint and a lift of fresh mint. The palate is full-bodied and structured, broad and textured yet held together by firm acidity through a long finish. Serve at 11 to 13 degrees in a large glass, decanting a young bottle if you like.

Its weight and structure suit richer fish such as monkfish or baked salmon, as well as roast chicken in a creamy sauce. It also stands up to hard nutty cheeses like aged Gouda or Comté.
