De Fermo’s Don Carlino is a Pecorino from Loreto Aprutino in Abruzzo, farmed biodynamically between the Adriatic and the Majella massif. Nine months in barrel give it a creamy texture, with pear, white peach, almond and a honeyed depth.

Description
De Fermo farms biodynamically at Loreto Aprutino in Abruzzo, on hills set between the Adriatic coast and the glacial Majella mountain range. The cooling influence of that altitude and the sea breeze keeps freshness in the fruit, while the clay and limestone soils give the wine body and grip. Pecorino is a native Abruzzo grape prized for its natural acidity and its capacity to ripen without losing tension. This bottling is fermented and aged for nine months in wood, and the extended contact with the fine lees during that time builds a creamy, rounded texture through the release of mannoproteins, while the barrel adds a light spice and oxygen exchange that broadens the palate. The colour is bright straw-gold. The nose shows pear, white peach and almond over honey and a waxy, beeswax note. The palate is full and creamy but held by fresh acidity, with a saline, mineral finish that reflects the site. It is a white with real substance rather than a simple aperitif style. Serve at 11 to 12 degrees.







Additional information
The creamy texture and honeyed fruit suit roast pork and chicken in a cream or mushroom sauce. It also carries firm white fish such as cod, and works with aged pecorino and other hard nutty cheeses. Serve alongside a herb-roasted chicken.
