Description
De Fermo is a biodynamic estate in Abruzzo, central Italy, and this rosato is made entirely from Montepulciano, the dark skinned local grape that gives the region's reds and its cerasuolo style rosés their depth. The vineyards are farmed without synthetic inputs, and the hill country between the Apennines and the Adriatic gives the diurnal range that holds acidity in ripe fruit. The wine sees brief skin contact for colour and is aged seven months in concrete tanks, which allow a slow micro oxygenation without imparting oak flavour, giving the wine more texture and breadth than a steel made rosé while keeping the fruit fresh. The colour is a deep cherry pink. The nose shows red cherry, raspberry and plum with a wild herb edge typical of the region. The palate is dry and full for a rosé, with red currant and a faint savoury grip from the Montepulciano skins, finishing long and fresh. Serve at 10 to 12 degrees in a larger glass, which lets the texture show, alongside richer dishes.
