El Dorado is the brand of Demerara Distillers in Guyana, the single house that now holds the country's legendary heritage stills, including wooden pot and wooden Coffey stills found nowhere else on earth. This 21 year old is one of the range flagships, a molasses based blend whose age statement reflects the youngest rum in the vat, with older components inside, married across those historic stills.
Twenty one tropical years build a rich, classic Demerara profile, caramel, raisin and dried fruit with honeyed spice and a generous backbone of oak, edging into burnt sugar, dark chocolate and tobacco on the finish. Where El Dorado was long known for a rounded sweetness from dosage, this release is presented unsweetened and drinks noticeably drier than older bottlings, letting the wood and dark fruit lead.
