Description
David Duband farms seventeen hectares of Ecocert-certified organic vineyards across five Côte de Nuits appellations, and this is his village Nuits-Saint-Georges. The wine is pure Pinot Noir, grown on the limestone and marl soils of the Côte-d'Or that give Burgundian reds their red fruit and savoury minerality. Nuits-Saint-Georges tends to a firmer, more structured style than its neighbours, and this wine reflects that. Organic farming keeps the soil alive, which helps the fruit carry the earthy, mineral signature of the village. After fermentation the wine ages in French oak barrels, where slow oxygen exchange rounds the tannin and folds in a light spice without covering the fruit. The colour is a deep ruby. The nose shows dark cherry and red berries over rose, damp earth and a touch of oak spice. The palate is medium bodied, with fine tannin, bright acidity and a long, savoury finish that leans more towards earth than pure fruit. This will reward a few years in the cellar. Serve at 15 to 17 degrees, decanted briefly, with roast duck, beef or a mushroom dish.
