Description
David Duband has run his family domaine in Burgundy since 1991, farming seventeen hectares across five appellations to Ecocert principles and making his own wines rather than selling the grapes. This Gevrey-Chambertin comes from old vines of around sixty-five years, whose deep roots and low yields give concentration and complexity. Gevrey sits on the Cote de Nuits, where limestone bedrock with iron-rich clay and marl gives the village its reputation for structured, sturdier Pinot Noir. The cool continental climate and eastern exposure give slow, even ripening that preserves acidity and perfume. The wine is fermented and aged in French oak, where slow oxygen exchange softens tannin and adds a fine spice while the fruit stays in front. The colour is a deep ruby, the nose showing dark cherry, blackberry, forest floor and a savoury, gamey earthiness with age. The palate is medium bodied and structured for a village wine, with firm tannin, bright acidity and a long, savoury finish. Serve at 16 degrees, decanting briefly, in a Burgundy glass. It suits game and roast meats.
