David Duband farms his Cote de Nuits vineyards under Ecocert principles, and this Chambolle-Musigny is hand-tended Pinot Noir from one of Burgundy’s most perfumed villages. Oak-aged, it shows red cherry, raspberry, rose and a fine, silky structure.
Description
David Duband knows the Cote de Nuits intimately, working seventeen hectares under Ecocert ecological farming since 2001 and drawing fruit from several of the area's leading appellations. This is his Chambolle-Musigny, a village famous for producing some of Burgundy's most perfumed and delicate Pinot Noir. The soils here are limestone-rich with a higher proportion of clay and active chalk than its neighbours, which is what gives Chambolle its floral lift, finesse and silky tannins rather than heft. The cool continental climate and a long, slow ripening preserve the bright acidity and red-fruit character at the heart of the wine. After fermentation the Pinot Noir is aged in oak, a measured amount that supports the fruit and adds subtle spice while slow oxygen exchange polishes the tannins. The colour is a bright, light ruby. The nose is fragrant, with red cherry, raspberry and wild strawberry, crushed rose and a touch of forest floor. The palate is medium bodied and silky, the tannins fine, the acidity fresh and the finish long and elegant. Serve at 15 to 17 degrees, in a large Burgundy glass. It suits roast poultry, duck, game birds and mushroom dishes.
