Description
David Duband is one of the few young winemakers to have stood out in Burgundy, a region where starting from scratch is difficult and success harder still. Once labelled a modernist for his concentrated reds, he has refined his approach over time and now farms organically. This Bourgogne Rouge is his regional Pinot Noir, drawing fruit from vineyards around the Côte de Nuits. Burgundy's limestone and clay soils and cool continental climate are the foundation of Pinot Noir's perfume and freshness, while the cool nights preserve acidity and let the fruit develop slowly. Organic farming keeps the vineyard balanced and the fruit expressive. After fermentation the wine spends 14 months in oak barrels, where malolactic fermentation softens the acidity and gentle oxygen exchange adds structure and a light spice without burying the fruit. The colour is bright ruby. The nose shows cherry and red berries with an earthy, floral edge typical of the grape and place. The palate is light to medium bodied, with fresh acidity, fine tannin and a savoury finish. Serve at 15 to 16 degrees. It suits roast poultry, duck and mushroom dishes.
