Damoiseau Cuvee du distillateur is an aged agricole from Damoiseau, the largest distillery in Guadeloupe and a major export name, made from fresh-pressed sugar cane juice rather than molasses. This is a three year old, matured in ex-bourbon casks and bottled at 42%.
Damoiseau works on a column still kept low to hold the cane character, and a young ex-bourbon aged agricole like this typically keeps a grassy, herbaceous core while picking up vanilla, light oak and a touch of baking spice from the barrel. Three years in Guadeloupe's tropical climate does more than the same time in Europe would, so expect a drier, spice-edged cane rum rather than a sweet one.
