Dalwhinnie is the highest distillery in Scotland, high in the central hills. This is the soft, waxy malt of the Drumochter hills.

Description
This official Dalwhinnie, at 43%. Dalwhinnie takes its name from the old drovers' meeting place on the high road north. In 1934 a fire destroyed much of the stillhouse, which was rebuilt around the original worm tubs.
The spirit was run through the pear shaped stills on soft snowmelt water, giving the soft, honeyed Highland spirit. It was matured in refill ex-Bourbon oak, a soft vanilla beneath the heather honey. Without an age statement, vanillin sweetness and a gentle apple point to good years in oak. Years in oak round the spirit, the apple and honey deepening over the waxy core. Refill oak lets the soft heather honey character lead the way. The clean spirit shows the cask clearly, vanilla and honey to the fore. Maturation at over a thousand feet keeps the spirit soft and slow to develop. The worm tubs leave a waxy weight that carries through the years in cask.
At an approachable 43% it is soft and easy. Soft heather honey, apple and a gentle malt, with a soft vanilla from the oak. Beneath it run apple, pear and a soft honey. It finishes long, soft and warming. This is a gentle, honeyed Highland single malt.
