Water is soft snowmelt drawn from the surrounding hills. One of the original Classic Malts, it stands for the Highlands. This is Dalwhinnie’s soft, heather honey Highland style.

    An official release of Dalwhinnie, a 16 year old, from 2000, cask D.SX.312, at 43%. Dalwhinnie is a gentle, honeyed Highland single malt, one of the original Classic Malts of Scotland. Cook and Bernheimer, then America's largest distillers, bought it at auction in 1905.

    It was worked through the stills and worm tubs for a soft, waxy make, for a soft, honeyed make with a waxy depth. Maturation in an Oloroso cask laid dried fruit, fig and walnut over the honeyed malt. At oxidative maturity vanillin and lactones are fully expressed, the heather honey deepening over a waxy weight. The light, floral make takes cask flavour gently while keeping its honey. Active wood frames the fruit without overwhelming the gentle Highland spirit. The worm tubs leave a waxy weight that carries through the years in cask. Refill oak lets the soft heather honey character lead the way.

    At 43% it is gentle, sweet and honeyed. A gentle, floral sweetness, with dried fruit, fig and walnut from the cask. Beneath it run apple, pear and a soft honey. A long, honeyed finish carries an orchard fruit and a warming heat. This is a Classic Malt of real charm.
