Dalwhinnie from the distillery, a 17 year old, at 51.2%, 4998 bottles in all. Dalwhinnie is a light, honeyed Highland malt shaped by its worm tubs and the coldest air in Britain. It runs pear shaped copper stills whose vapour is cooled in traditional worm tubs.
It was run through the pear shaped stills on soft snowmelt water, giving the soft, honeyed Highland spirit. It was matured in refill ex-Bourbon oak, a soft vanilla beneath the heather honey. Into oxidative maturity, slow air ingress builds fruity ethyl esters (apple and pear) and a honeyed depth over the worm tub wax. The light, floral make takes cask flavour gently while keeping its honey. Maturation at over a thousand feet keeps the spirit soft and slow to develop. It was one of the six original Classic Malts of Scotland, chosen to represent the Highlands. It stands at over a thousand feet above sea level, the highest distillery in Scotland.
At 51.2%, undiluted, it is deep and waxy. Soft heather honey, apple and a gentle malt, with a soft vanilla from the oak. Beneath it run apple, pear and a soft honey. It finishes long, soft and warming. This is the soft, waxy malt of the Drumochter hills.
