A 7 year old Dalmunach from the bottler That Boutique-y Whisky Company, at 48.5%. Apple, pear and a soft honey run through it, with dried fruit, fig and walnut from the cask. One of the largest, most efficient malt distilleries in Scotland. Its eight stills stand in a striking circular cluster, a showpiece of modern design. A Dalmunach of a 7 year old chosen by the bottler That Boutique-y Whisky Company, bottled at 48.5%, one of 453 bottles. Dalmunach rose in 2015 where Imperial once stood, a modern Speyside distillery by the Spey. Chivas Brothers built it to replace the lost capacity of Imperial, which was demolished in 2013.
It was distilled for the light, fruity Speyside spirit Dalmunach is known for, for the light, fruity make Dalmunach is known for. An Amontillado cask added a dry, nutty, almond edge. These early years are extractive, the oak surrendering vanillin as vanilla and oak lactones as coconut to a fresh, fruity make. Even young, the spirit shows a clean, fruity Speyside charm. The clean spirit shows the cask clearly, vanilla and fruit to the fore. Water comes from the Balintomb Burn, near the River Spey at Carron. The name comes from the Dalmunach pool, a stretch of the Spey beside the distillery.
At a hearty 48.5% it carries real weight. A light, clean fruitiness, with dried fruit, fig and walnut from the cask. The texture is light and clean, the fruit lifted by vanilla. It finishes light, fresh and fruity. This is a fresh Speyside malt of the new generation.
