This Dalmunach was bottled by the Elgin house Gordon and MacPhail, a 9 year old, distilled in 2016, from cask 945637, bottled at 63%, one of 232 bottles. Dalmunach rose in 2015 where Imperial once stood, a modern Speyside distillery by the Spey. Sixteen stainless washbacks feed four wash and four spirit stills.
It was worked through the distillery's eight stills for a fruity, light spirit, giving the clean, fresh Speyside spirit. A bourbon barrel held it, vanilla and a soft citrus over the fruity malt. In its extractive youth the cask lends vanillin vanilla and lactone coconut to a bright, clean spirit. The clean, fruity make takes a sherry or wine cask especially well at a young age. Single malt Dalmunach is scarce, the spirit being a blend component first and foremost. The cool Speyside air gives a slow, even maturation in the warehouses by the Spey. Refill oak lets the fresh Dalmunach character lead, apple and citrus beneath.
At cask strength 63% it is full bodied. Apple, lemon and a clean malt, with a soft vanilla from the oak. The texture is light and clean, the fruit lifted by vanilla. It finishes light, fresh and fruity. This is a fresh Speyside malt of the new generation.
