The revived blender James Eadie bottled this Dalmunach, a 9 year old, distilled in 2016, bottled at 46%, one of 1426 bottles. Dalmunach, built on the Imperial site at Carron, is a modern Speysider made mostly for blends. The light, fruity spirit is made chiefly for the Chivas Regal blends.
It was drawn off four wash and four spirit stills in their circular cluster, for a bright, modern Speyside spirit. An Amontillado cask added a dry, nutty, almond edge. Bottled young and extractive, the oak gives quick vanillin (vanilla) and oak lactones (coconut) over a lively, fruity malt. A young distillery, Dalmunach leans on active casks, the wood shaping much of the flavour. It is a young distillery, so most bottlings are independent single casks of modest age. Even young, the spirit shows a clean, fruity Speyside charm. The fresh, fruity make is a model of the new Speyside style.
At 46% it is gentle, sweet and fruity. A light, clean fruitiness, with raisin, date and treacle from the cask. The mouthfeel is light, the fruit carried on a clean body. It finishes light, fresh and fruity. This is a light, fruity Speyside single malt.
