A Dalmunach of a 5 year old chosen by the independent Dràm Mòr, distilled in 2016, from cask 52, bottled at 57%, one of 260 bottles. Dalmunach is a striking new Speyside distillery on the banks of the Spey, named for a pool in the river. The distillery sits at Carron, in the heart of Speyside on the Spey.
The spirit was drawn off four wash and four spirit stills in their circular cluster, to build a fruity, grassy character. An ex-Bourbon barrel shaped it, vanilla and citrus beneath the fruity malt. These early years are extractive, the oak surrendering vanillin as vanilla and oak lactones as coconut to a fresh, fruity make. Even young, the spirit shows a clean, fruity Speyside charm. Active wood frames the fruit without overwhelming the light, fresh spirit. The light, fruity spirit is made chiefly for the Chivas Regal blends. Its eight stills stand in a striking circular cluster around a central spirit safe, a showpiece of modern design.
At 57%, undiluted, it is deep and fruity. A fresh, fruity sweetness, with a soft vanilla from the oak. The mouthfeel is light, the fruit carried on a clean body. The finish runs clean, fruity and bright. This is a fresh Speyside malt of the new generation.
