Description
The Huntly bottler Duncan Taylor bottled this Dalmunach, a 4 year old, distilled in 2016, from cask 10828217, 10828227, bottled at 54.8%, one of 271 bottles. Dalmunach, built on the Imperial site at Carron, is a modern Speysider made mostly for blends. The distillery sits at Carron, in the heart of Speyside on the Spey.
Drawn off four wash and four spirit stills in their circular cluster, for the light, fruity make Dalmunach is known for. A sherry butt held it, the wood lending raisin and walnut. Bottled young and extractive, the oak gives quick vanillin (vanilla) and oak lactones (coconut) over a lively, fruity malt. The fresh, fruity make is a model of the new Speyside style. Its eight stills stand in a striking circular cluster around a central spirit safe, a showpiece of modern design. The light, fruity spirit takes cask flavour readily while keeping its fresh, clean core.
At cask strength 54.8% it is full bodied. A bright, fruity sweetness, with dried fruit, fig and walnut from the cask. A green apple and a gentle spice lift it. The close is clean, fruit over a gentle oak. This is a fresh Speyside malt of the new generation.
