Dalmore is a Highland distillery on the Cromarty Firth, famous for its sherried malt. Water comes from the River Averon, drawn from Loch Morie. This is the Royal Stag malt of the Cromarty Firth.

    This official Dalmore, a 10 year old, from 2007, at 46%. Dalmore is the Highland malt of the Royal Stag, rich with orange, chocolate and sherry. The rich, dried fruit style runs through the core range, from the twelve year old upward.

    It was run through the distillery's unusual flat topped and water jacketed stills, to build a rich, sherry loving character. A sherry cask held it, the wood lending raisin, fig, orange and a coffee depth. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the rich body fuller and darker. Refill oak lets the full bodied Dalmore character lead, orange and dried fruit beneath. The Dalmore range climbs to some of the oldest and most expensive whiskies in the world. Most expressions are finished in aged sherry wood, giving orange, chocolate and treacle. Vanillin and oak lactones from the wood lend vanilla and coconut over the rich malt.

    Bottled at 46%, it is rounded. Marmalade, chocolate and a malty depth, with dried fruit, chocolate and orange from the cask. A baked fruit and a warm spice lift it. It finishes rich, malty and warm. This is the rich, sherried Highland malt of Dalmore.
