Description
This official Dalmore, a 10 year old, from 2006, at 46%. Dalmore is a Whyte and Mackay distillery known for its opulent, dried fruit rich style. Much of its sherry comes from aged Oloroso casks, the Matusalem, Apostoles and Amoroso butts of Gonzalez Byass.
Worked through flat topped and water jacketed stills for a rich, oily spirit, to build a rich, sherry loving character. An ex-Bourbon barrel shaped it, vanilla and citrus beneath the rich malt. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the rich body fuller and darker. Maturation in the cool north keeps the rich spirit balanced over the years. The thick spirit shows the sherry clearly, dried fruit and orange over a malty depth. Its flat topped wash stills and water jacketed spirit stills build a thick, rich, oily spirit. Water comes from the River Averon, drawn from Loch Morie in the hills above.
Bottled at 46%, it is rounded. Orange, treacle and a warm spice, with a soft vanilla from the oak. Marmalade, chocolate and dried fruit fill the middle. The finish runs rich, fruity and warm. This is a rich, full bodied Highland single malt.
