Dalmore from the distillery, a 29 year old, from 1980, at 40%. Dalmore is a full bodied, sherried Highland single malt from the shores of the Cromarty Firth. The Dalmore range climbs to some of the oldest and most expensive whiskies in the world.
The spirit was worked through flat topped and water jacketed stills for a rich, oily spirit, for a heavy, rich make that suits aged sherry wood. An aged Oloroso cask wrapped the rich spirit in dried fruit, chocolate and orange, the Dalmore signature. In the oxidative, evaporative years concentration brings dried fruit, fig, coffee and a treacly depth over a rich malt. Maturation in the cool north keeps the rich spirit balanced over the years. An aged Oloroso cask suits the rich spirit, dried fruit and chocolate meeting the oily weight. The cool Highland air on the firth gives a slow, even maturation.
At 40% it is clean and soft. A rich, sherried sweetness, with dried fruit, chocolate and orange from the cask. Marmalade, chocolate and dried fruit fill the middle. The finish is deep, sherried and dark. This is a chocolate, orange and dried fruit Highland single malt.
