    An official Dalmore, at 48%. A full bodied malt of marmalade, chocolate and dried fruit, with plum and red berry from the cask. Its water jacketed stills build a thick, rich, oily spirit. Water comes from the River Averon, drawn from Loch Morie. Much of its sherry comes from the aged Oloroso casks of Gonzalez Byass. This is a sherried Highland malt of real depth.

    A Dalmore, a distillery bottling, at 48%, 450 bottles in all. Dalmore is a Highland distillery on the Cromarty Firth, famous for its rich, heavily sherried single malt. It is owned by Whyte and Mackay, and its King Alexander III bottling nods to the clan legend.

    Made in copper stills whose water jackets give a heavy make, for a heavy, rich make that suits aged sherry wood. A Tawny Port cask laid plum, chocolate and red berry over the rich spirit. No age is given, but vanillin vanilla and a rich, sherried malt are well integrated. The cool Highland air on the firth gives a slow, even maturation. Its flat topped wash stills and water jacketed spirit stills build a thick, rich, oily spirit. The water jacketed stills give a heavy spirit that soaks up sherry over a long maturation. Water comes from the River Averon, drawn from Loch Morie in the hills above.

    At its natural 48% it is concentrated. Baked fruit, coffee and a dark sweetness, with plum and red berry from the cask. Soft orange and a treacly malt sit behind the cask. A full, sherried finish ends on orange and dark chocolate. This is Dalmore's opulent, chocolate orange Highland style.
