Dalmore Constellation Collection 21 Years Old 1990

An official release of Dalmore, a 21 year old, from 1990, cask 18, at 56.5%, 777 bottles in all. Dalmore is a full bodied, sherried Highland single malt from the shores of the Cromarty Firth. Its long time master distiller Richard Paterson, known as The Nose, shaped the rich house style.

The spirit was distilled in flat topped wash stills and water jacketed spirit stills on River Averon water, building the luscious Dalmore style. An Oloroso hogshead lent dried fruit, walnut and a dark, treacly depth, soaked up by the heavy spirit. Into oxidative maturity, slow air ingress builds fruity ethyl esters (orange and dried fruit) over the chocolatey, sherried depth. The thick spirit shows the sherry clearly, dried fruit and orange over a malty depth. The slow loss of the angel's share concentrates the rich, sherried core over the years.

At a hearty 56.5% it carries real weight. Baked fruit, coffee and a dark sweetness, with dried fruit, chocolate and orange from the cask. Soft orange and a treacly malt sit behind the cask. The finish is long, rich and chocolatey. This is the rich, sherried Highland malt of Dalmore.
