Description
Dalmore from the distillery, a 19 year old, from 1992, cask 18, at 53.8%, 737 bottles in all. Dalmore is the Highland malt of the Royal Stag, rich with orange, chocolate and sherry. Its flat topped wash stills and water jacketed spirit stills build a thick, rich, oily spirit.
Made in copper stills whose water jackets give a heavy make, for a heavy, rich make that suits aged sherry wood. A Cabernet Sauvignon cask gave blackcurrant, red berry and a dry spice. Into oxidative maturity, slow air ingress builds fruity ethyl esters (orange and dried fruit) over the chocolatey, sherried depth. The rich, oily spirit takes cask flavour superbly, especially aged sherry wood. The rich, dried fruit style runs through the core range, from the twelve year old upward. Water comes from the River Averon, drawn from Loch Morie in the hills above. The slow loss of the angel's share concentrates the rich, sherried core over the years.
At cask strength 53.8% it is full bodied. A rich, sherried sweetness, with plum and red berry from the cask. Beneath it run orange, dark chocolate and dried fruit. Dried fruit, orange and a treacly oak see out the finish. This is the rich, sherried Highland malt of Dalmore.
