This official Dalmore, at 44%. Dalmore is a rich, chocolate and orange Highland single malt, deeply marked by sherry wood. Its spirit stills wear cooling water jackets, condensing the heavier compounds back for a fuller body.
Made in copper stills whose water jackets give a heavy make, for a heavy, rich make that suits aged sherry wood. Maturation in an Oloroso butt laid dried fruit, treacle and dark chocolate over the oily malt. Carrying no age, soft vanillin (vanilla) and a dried fruit richness suggest a fair spell in cask. Refill oak lets the full bodied Dalmore character lead, orange and dried fruit beneath. The rich, dried fruit style runs through the core range, from the twelve year old upward. Much of its sherry comes from aged Oloroso casks, the Matusalem, Apostoles and Amoroso butts of Gonzalez Byass. Its flat topped wash stills and water jacketed spirit stills build a thick, rich, oily spirit.
Bottled at 44%, it is rounded. A full, dried fruit richness, with dried fruit, chocolate and orange from the cask. The mouthfeel is heavy, the fruit carried on a rich, malty body. The finish runs rich, fruity and warm. This is Dalmore, rich with orange and dark chocolate.
