Description
This Dalmore was bottled by the Pitlochry bottler Signatory Vintage, a 35 year old, distilled in 1965, from cask 6659, bottled at 53.8%, one of 128 bottles. Dalmore is the Highland malt of the Royal Stag, rich with orange, chocolate and sherry. The distillery stands on the firth near Alness, in the Northern Highlands.
Distilled for the thick, full bodied spirit Dalmore is known for, for a full, opulent Highland spirit. A bourbon barrel held it, vanilla and a marmalade citrus over the oily malt. Ethereal and old, decades draw the malt to a rich, waxy depth of sotolon, old oak and dried fruit. The Royal Stag style is built on rich spirit and deep sherry wood. Long ageing turns the fresh orange towards marmalade, dark chocolate, coffee and a warm spice. Its long time master distiller Richard Paterson, known as The Nose, shaped the rich house style.
At cask strength 53.8% it is full bodied. A rich, sherried sweetness, with a soft vanilla from the oak. The mouthfeel is heavy, the fruit carried on a rich, malty body. The finish is long, rich and chocolatey. This is a chocolate, orange and dried fruit Highland single malt.
