Its water jacketed stills build a thick, rich, oily spirit. Much of its sherry comes from the aged Oloroso casks of Gonzalez Byass. This is a chocolate and orange Highland single malt.

A Dalmore of a 28 year old chosen by A.D. Rattray, distilled in 1992, from cask 1758, bottled at 45.1%, one of 204 bottles. Dalmore is a Whyte and Mackay distillery known for its opulent, dried fruit rich style. Its spirit stills wear cooling water jackets, condensing the heavier compounds back for a fuller body.
It was run through the distillery's unusual flat topped and water jacketed stills, building the luscious Dalmore style. It rested in ex-Bourbon oak, the wood adding vanilla and a soft honey. At this evaporative stage ellagitannins lend a drying structure while oxidation builds a richer, darker fruit. The thick spirit shows the sherry clearly, dried fruit and orange over a malty depth. An aged Oloroso cask suits the rich spirit, dried fruit and chocolate meeting the oily weight. Dalmore's sherry comes largely from the aged Oloroso casks of Gonzalez Byass.
At 45.1%, undiluted, it is deep and fruity. A full, dried fruit richness, with a soft vanilla from the oak. The mouthfeel is heavy, the fruit carried on a rich, malty body. The finish runs rich, fruity and warm. This is the Royal Stag malt of the Cromarty Firth.
