Description
This Dalmore was bottled by the Pitlochry bottler Signatory Vintage, a 28 year old, distilled in 1992, from cask 1750, bottled at 43.7%, one of 223 bottles. Dalmore is a rich, marmalade and dark chocolate Highland single malt of real opulence. The rich, dried fruit style runs through the core range, from the twelve year old upward.
It was run through the distillery's unusual flat topped and water jacketed stills, for the rich, full bodied make Dalmore is known for. Maturation came in ex-Bourbon wood, the oak quiet behind the thick spirit. Through the evaporative decades the spirit concentrates, esters folding into dried fruit, chocolate and a warm spice. The water jacketed stills give a heavy spirit that soaks up sherry over a long maturation. Years in oak round the spirit, the fruit deepening to chocolate, marmalade and treacle. The Dalmore range climbs to some of the oldest and most expensive whiskies in the world.
At a natural 43.7% it is full and honeyed. Marmalade, chocolate and a malty depth, with a soft vanilla from the oak. A baked fruit and a warm spice lift it. A full, sherried finish ends on orange and dark chocolate. This is Dalmore, rich with orange and dark chocolate.
