Description
A Dalmore of a 25 year old chosen by Scotland's oldest independent bottler Cadenhead's, distilled in 1992, bottled at 59%, one of 270 bottles. Dalmore is a Highland distillery on the Cromarty Firth, famous for its rich, heavily sherried single malt. Its long time master distiller Richard Paterson, known as The Nose, shaped the rich house style.
It was worked through flat topped and water jacketed stills for a rich, oily spirit, for a full, opulent Highland spirit. It rested in ex-Bourbon oak, the wood adding vanilla and a soft honey. Through the evaporative decades the spirit concentrates, esters folding into dried fruit, chocolate and a warm spice. Years in oak round the spirit, the fruit deepening to chocolate, marmalade and treacle. The thick spirit shows the sherry clearly, dried fruit and orange over a malty depth. Much of its sherry comes from aged Oloroso casks, the Matusalem, Apostoles and Amoroso butts of Gonzalez Byass.
At a hearty 59% it carries real weight. Dried fruit, orange and a treacly malt, with a soft vanilla from the oak. Beneath it run orange, dark chocolate and dried fruit. It finishes rich, malty and warm. This is the rich, sherried Highland malt of Dalmore.
