This official Dalmore, a 21 year old, at 43.8%. Dalmore is a rich, chocolate and orange Highland single malt, deeply marked by sherry wood. Its spirit stills wear cooling water jackets, condensing the heavier compounds back for a fuller body.
Worked through flat topped and water jacketed stills for a rich, oily spirit, giving the thick, oily spirit that drinks sherry so well. Ex-Sherry wood, the Matusalem and Apostoles style, gave a deep marmalade and chocolate richness. In the oxidative middle years oxidation draws out a deeper dried fruit, vanillin and lactones fully expressed. An aged Oloroso cask suits the rich spirit, dried fruit and chocolate meeting the oily weight. The cool Highland air on the firth gives a slow, even maturation. Its long time master distiller Richard Paterson, known as The Nose, shaped the rich house style.
At an approachable 43.8% it is soft and easy. Dried fruit, orange and a treacly malt, with dried fruit, chocolate and orange from the cask. Beneath it run orange, dark chocolate and dried fruit. It finishes rich, malty and warm. This is a chocolate, orange and dried fruit Highland single malt.
